Small to medium Brussels sprouts work best in this dish; they cook in the same amount of time as the onions. If only larger Brussels sprouts are available, steam them separately and increase the cooking time by a few minutes.
The sauce can be made with milk, stock or even half of each, depending on how much richness is preferred.
